“Hari ini kita mengadakan workshop memasak berbahan dasar shorgum, “ kata Nyoman Suwartha, Sekretaris Jenderal Pusaka Indonesia, dalam sambutan acara Workshop Memasak Shorgum di Jalan Pemuda No.11, Bogor, Jawa Barat, Sabtu (24/8/2024).

Lebih lanjut, Nyoman Suwartha menerangkan Pusaka Indonesia telah mengadakan berbagai workshop-workshop lainnya, antara lian, Workshop Sigma Farming, Workshop Membuat Batik, dan lain-lain. “Jadi kegiatan Pusaka Indonesia cukup banyak, dan kali ini fokus kegiatan masak-memasak, “ terang jebolan pendidikan Teknik Sipil dan Lingkungan, yang sejak 2010 hingga sekarang masih bertugas sebagai dosen di Universitas Indonesia.

Menurut Nyoman Suwartha, workshop ini merupakan kolaborasi dari dua divisi di Pusaka Indonesia, yaitu Sigma Farming Akademi yang di bawahnya mempunyai Divisi Kebun Surgawi. “Kemudian, Bidang Seni Budaya yang ada divisi baru selain Wastra, yakni Akademi Kuliner Nusantara, “ bebernya.

Nyoman Suwartha menyampaikan kolaborasi dari dua divisi ini mempunyai maksud dan tujuan, yakni workshop kali ini ingin merespon bagaimana Pusaka Indonesia merespon isu ketahanan pangan. “Terutama ingin menjadi model bagaimana kita bisa berdikari, mandiri berketahanan pangan menciptakan produk-produk yang kita tanam sendiri, “ paparnya.

“jadi kalau melihat secara sistem ini adalah upaya untuk memberikan contoh pengelolaan dari hulu sampai dengan hilir, “ imbuhnya.

Di hulu, Pusaka Indonesia mempunyai Kebun Surgawi jadi bagaimana mulai dari pemulihan tanah, kemudian penanaman. “Apakah itu shorgum, sayur-mayur maupun bahan-bahan yang lain, kemudian dipelihara, dipanen, diproduksi untuk kemudian disalurkan ke Pasar Gemah Rimpah atau dipakai ke kader di wilayah masing-masing, “ uraiannya.

Harapan Nyoman Suwartha, workshop ini bisa berkesinambungan, Pusaka Indonesia mengupayakan, mensosialisasikan di masing-masing wilayah sehingga tidak hanya sekedar memproduksi tapi sampai dengan menyajikan dalam bentuk makanan maupun nanti produk-produk yang lain.

“Sehingga kolaborasi ini memberikan contoh, bagaimana kita mengelola secara berkelanjutan dari hulu samapi ke hilir. Tidak hanya dikomsumsi sendiri, tapi bisa juga dijual, “ ujarnya.

Nyoman Suwartha menyebut dalam kesempatan ini nanti akan dipandu langsung oleh Chef Nanang. “Terima kasih sudah berbagi ilmu bagaimana memasak, kemarin sewaktu talkshow sudah diawali dengan memasak nasi dan bubur berbahan dasar shorgum, “ tuturnya.

Kali ini, kata Nyoman Suwartha, ada berbagai sajian menu, ada Ikan Pari dan ada Cakalang, Cendol juga berbahan dasar Shorgum. “Nanti kita akan ikuti bagaimana pembuatannya dan tentu juga mencicipi dengan suka-cita, “ ungkapnya.

Nyoman Suwartha menyampaikan terima kasih kepada tim Jabar yang ketempatan menjadi host. Tentu berkoordinasi dengan Jakarta. Terimakasih perwaklan dari Bali, Jawa Tengah dan DIY. “Untuk Jawa Timur dan Sumatera hadir secara online, “ tegasnya.

Adapun, Nanang Sharna sebagai pengisi materi Workshop Memasak Shorgum menyampaikan, dalam workshop ini kita akan belajar untuk memasak Shorgum. “Karena Shorgum itu adalah pengganti nasi yang sangat sehat, “ kata pembantik yang baru-baru ini meraih anugerah Murthi (Museum Rekor Terhebat Indonesia), yang penganugerahannya berlangsung di Kedaton Nusantara Jakarta

Nanang menyebut Shorgum itu sendiri banyak mengandung vitamin, protein, dan serat yang sangat tinggi jadi baik untuk tubuh kita untuk pengganti nasi, dimana nasi sudah tidak relevan lagi untuk dikonsumsi secara berlebihan.

Orang Indonesia itu dominan makan nasi. Tapi sebenarnya Shorgum itu warisan budaya Nenek Moyang kita jadi Shorgum dulu menjadi makanan pokok kita yang ada di Jawa, Bali dan di pulau-pulau lainnya. Bahkan dulu pada Zaman Majapahit sampai Angkor Wat di Kamboja sana, Shorgum menjadi makanan pokok.

Nanang menyampaikan workshop hari ini ada tiga kelompok, yakti Ikan Pari, Cakalang dan Cendil.

“Kita nanti masak sama-sama saja, saya masak dulu, terus kita akan masak bersama dan nanti saya akan arahkan. Jadi learning by doing, belajar sambil praktek,” pungkas Nanang Sharna optimis.***
